Take it away, Bad Horse’s Filly:

It’s cold and snowy. Again. Winter is dragging on too long, in my opinion. I decided I needed comfort food, and by comfort food, I mean I needed something only my mom makes. So I called my mom and asked her for her Chicken Cacciatore recipe, one of my favorite childhood dinners (what can I say, I’m half Italian – and don’t tell child services, but it was served with a nice wine for everyone, including the kids). Cacciatore is guaranteed to chase away the deepest winter blues.

    How easy is it to make Gelato at home? I have Cuisinart ice-cream maker. Does anybody have a recipe?

    I’m new around here. Could someone explain to me who Bad Horse’s Filly is and what these menus are about?

    I’m not complaining. I love to cook and talk about food. It just seems like there is a story here that I don’t have the background to.

    @MagicPanda: Not much of a story. I’m BHF and I run a menu service for families, and I also write a little blog where I post recipes from said menus. In July-ish after I emailed John a couple of recipes he was looking for, he asked me to post a Thursday Night Menu, since often random posts here at BJ turn into cooking posts.

    This month I asked BJ commenter JeffreyW to also post recipes on my blog, since he kept posting food pix here and people couldn’t stop drooling.

    I think that covers it.

    Yum! The Oregano-Parmesan Zucchini looks delicious as well. Do you think one could use baby eggplant instead of zucchini if one was so inclined?

    Sauteed shrimp with oriental veggies and brown rice tonight! Found some sweet potatoes I’d forgotten about while digging for some cloves of garlic. Sweet potato pie coming out of the oven in about 20 min.

    @debit: Absolutely, that’s actually a great idea.

    Also, in case anyone is interested I just posted a rave on a gluten-free, wheat-free pasta for anyone who is looking for a good substitute for wheat pastas.

    Tinkyada is great. My mother-in-law has Celiac and thus can’t eat gluten. It’s the only gluten free pasta I’ve found that is edible (although I still prefer the real thing)

    In other news: I am trying to apply for a home mortgage. It will be my first, and we are scrambling to get something before the first-time home-buyer tax credit runs out. This is all very stressful, and reminds me of why I have been avoiding buying for all these years. Though now of course I wish I had been paying down my outstanding debt at a faster pace. I also wish we could have rehabilitated my wife’s credit in time to get her on as co-borrower, but since she only just now got a full-time job in January, we are just getting started on that.

    Anyone have any good advice, perchance? I have very little to show for in the bank, which worries me.

    @Jason Bylinowski: If your bank isn’t a credit union, consider trying one. They are, so I’m hearing, actually lending money as opposed to larger banks and mortgage companies. Good luck!

    @Bad Horse’s Filly: I forgot the most important part of the story. After the first couple of menu’s posted, John kept forgetting to post them:

    Will John consider implementing a weekly “new recipe” feature?
    We already sort of do, on Thursday nights, when I remember.

    OK, gotta go convince Chloe I don’t hate her after her first legitimate Bad Dog moment: she snapped and snarled at the 20 year old, toothless cat when he wanted to sit on my lap. She’s getting really territorial when it comes to me, which is worrisome. I’ve never had a dog like her, so clingy and possessive.

    Mmmm…chicken cacciatore, my mom made it too, in an old electric frying pan. Italian comfort food is the best! Have you ever tried making it in a slow cooker? I’m tempted but afraid. Sure would make it an easier dish for a busy day, though.

    @debit: My wife is just about to join a credit union at her workplace. Yeah, who knows, we may have to go that route. My mother is a retired VP at a small mortgage company in our hometown, so we will be trying there first, but I’ll remember what you said about that. Thankee!

    @debit: Respect comes before love with dogs as with people. Assuming Chloe’s your dog, you really need to be firm about her behavior (and attitude) around other animals in the pack (including your cat). Ultimately, dogs are happiest when they are secure about who is the top dog, so you’ll be doing her a favor.

    Yeah, I read Cesar’s book, so now I’m an expert. It works with kids, too. Pssht!.

    Dinner was Lamb Tagine with apricots, plums, sweet potatoes and carrots. Over Basmati Rice with Greek Yogurt. Despite the crap curling. However, Go Evan! Great performance!

    @Jason Bylinowski: Double second on the credit union, especially if you are a member, which I recommend anyway. They’re more cautious because it’s the members’ money they’re lending but if your financial ducks are in a row you should be fine and get a decent rate also. Oh and fixed fixed fixed and fixed. Do NOT get an ARM ANYTHING.

    The behaviorist term is “resource guarding”, with you as the valuable resource to be guarded (doesn’t that make you feel… special?). I sympathize, because we’re going through the same thing with the 20lb Papillon/Pap-cross we accidentally adopted five months ago. What we were told to do, by the experienced rescue people I trust, is immediately dump Gloria off our laps and put her in a “time out” in her crate. She is a smart girl, so she’s learning… slowly… that she just has to Put UP with the selfish intrusions of our other two Papillons (who are somewhat smaller than she is) and even the cats (although that’s taking a lot longer). She’ll ‘forget’ and growl at Sydney or Zevon, and I’ll say “time OUT, Gloria!” and she’ll march into her crate & wait for me to latch the door behind her. But she still gives me the hardened-con “totally worth it, ya big meanie” expression as she goes.

    Now that she’s internalized the Must-Never-Snap-At-Other-Fourlegs rule, we’re working on distracting her (calling her over for a treat) when we spot her hesitating as she considers whether chasing the other guy away from “her” space is worth going to jail again. Slowly, slowly…

    @Anne Laurie: Thanks for the advice. That’s what I did (dumped her from my lap) and sent her out of the room for fifteen minutes. She usually submissive around the cats (head averted as she walks by “see? I’m not challenging your or about to bite you.”) so it surprised me when she snapped at poor old Max.
