Take it away, Bad Horse’s Filly…

I keep hoping for grilling weather, but it is not quite there yet for many of us. This menu you can grill, but broiling works just as well. It is a fairly quick meal to prep. One trick for marinades is to prepare them when you purchase your meats or poultry, add marinade and meat to bag and freeze. Then all you have to do is thaw them out and you’re ready to grill, broil or stir-fry. Otherwise, marinate overnight in a sealed container in the refrigerator. Most chefs recommend room temperature for meats before cooking. If you take it out while prepping the remainder of the meal, it should be room temp before cooking. For this menu, begin cooking the rice before prepping the remainder of the meal and it should be done by the time you finish the steak and beans.

    Hope John reads this before he starts with the bar-b-que. Dude, a fire extinguisher is your friend. Learn how to use it. I really don’t want to see a post of you being air evac’d to the state burn unit. Also too, teach Tunch and Lily how to use the fire extinguisher or at least call 911.

    @mai naem: It’s the only single use item Alton Brown recommends using in the kitchen ever. Oh and no point in training Tunch to dial 911. Lily would jump right up and do it, but Tunch would just give a disdainful look and go hunting for a new tuna supplier house.

    Well, I for one, am grateful for the long thread on barbecue’ing on porches because we have just started grilling here and for some incredibly stupid reason we set the gas grill up under the porch. It sounds like that’s a bad idea and I’m going to move it before the next grilling event. Thanks to everyone who turned out to make fun of John, and obsessive homeowners, in the earlier thread.

    Dinner tonight here was
    sweet spiced indian rice with apricots
    dal
    fennel and cumin roasted potatoes and cauliflower (its like a quick, dry, version of an indian alu ghobi)
    pork vindaloo
    fresh mango/avocado salsa
    sour hot fried okra

    It goes against the grain but we’ll have it again tomorrow night. I think its because I lived with Brahmins in Nepal but I hate leftover food. I feel like every meal should be made from scratch, and eaten while its fresh.

    Oh, FSM, thank you, that was cuter than hell. I can say from personal experience that at any official Navy function I have been at that includes a dance floor, the Cha-cha slide and electric slide are the most popular dances- everybody knows how to do them.

I was forced to go to many an officer function when my dad was still in (curse of being CotB) and they were all cutting rugs out there, including my parents.

    Sorry, but only poseurs think there’s a such ting “grilling weather.”

    In KC, it doesn’t matter if it’s raining, snowing, sleeting, a tornado—all weather is grilling weather.
