    dude, this is Labor Day. It’s supposed to be the last carefree day of summer. The weather is beautiful here in NoVa and probably out there in WV also.

    I don’t care. the brown butter plum crumble is smelling fine and looking tasty, the afternoon of miniCthulu has all hands on board and I’m about to get the charcoal fired up so these here marinated chickens can get with the roast. For today, fuck the GOP, the Democratic Party and all their related foolishness. I’m gonna have my bacon sauteed escarole and a cuppa, then celebrate the American Worker-moi.

    I feel ya JC. As frustrating as it is now, it’s nothing compared to what will happen when the Republicans take over both houses.

    The fucked up mess they will unleash onto the American polity will still be blamed on Obama and 70% of the American public will believe it.

    I am saving up now for the liquor by-the-case purchases I will be making then.

    Also: ACC loyalty aside, I think Boise is going to behead and field dress the Turkeys and serve them with stuffing and sweet potatoes.

    So, I’m looking for some recipe suggestions, and this seemed like a potentially good place to look.

    The only thing I had grow well in my garden this year was basil. I have two genovese basil plants, three african basil plants. All are at least 3-4 feet high, between 1-3 feet in circumference. The bumblebees are out in force.

    The african basil is a milder basil than the genovese, but still makes a nice pesto. Still, this would be more pesto than I, or anyone I know, can possible eat, even with plans to freeze it.

    Any suggestions for meals with lots of fresh basil?

    Did anyone find the latest Mad Men episode weird? I thought it was truly bizarre, what with Pegs not trying to GTFO from work to go to dinner on her birthday, while the old fart Doug trying to take a dump in Sterling’s office. Draper is such a fuckwad for trying to avoid to make a call to his only true friend on her death bed. And the new hire, the short guy, is annoying as hell.

    You don’t have to freeze it solely for pesto — it will cook up nicely in frozen form. Here’s a website with freezing instructions along with a bunch of recipes you can use the frozen basil in.

    For fresh basil, one of my all-time favorites is this salad from Cooking Light: Sweet Onion, Tomato and Corn Salad with Fresh Basil.

    Really, Ya need to take a few hours off from the political craziness sometime.
    The crickets are chirping/humming in the garden, and my dog, Katie, is sunning her belly on the patio.

    Tess, my basil patch runneth over this year also.

    Just tossed into some hot thick spaghetti, olive oil and romano cheese couldn’t be better.

    Kind of a hot version of a salad caprese- Oil individual ramekins. Carefully crack an egg in each one. Sprinkle minced garlic and basil over it. Lay some thin slices of mozzerella. Over that, place a tomato slice, sprinkle some parm or romano cheese on top with a final drizzle of olive oil. Bake for 15-20 minutes at 350. Makes a great light supper.

    This is great when you’ve got fresh tomatoes and basil in abundance.
    Tomato pie:
    Layer a pie shell with thin slices of fontina cheese (mozzerella’s okay in a pinch.) Mix some chopped basil into a good grain mustard. Spread that over the cheese. Layer sliced tomatoes over that, in an attractive pattern. Sprinkle about a tablespoon of brown sugar over the tomatoes. Bake, 350, for about a half hour.Sounds like an odd combination but it’s delicious.

    Look up online for some recipes for savory muffins and breads.

    Thank you for all the suggestions! I’ve been neglectful of the garden this summer since it has been too hot for my tomatoes to produce much, and was out there for the first time in a week or so this morning. I swear the sight of all that basil just broke my brain.

    We have a pretty good pho restaurant in town, practically next door to where I work, so I’m loathe to take that on.

    I love the idea for savory muffins, though–I have a breakfast tailgate in two weeks, and cooking for a group is so much more productive than trying to get through it all with just my husband and me. And everyone is looking for something different at the tailgate.

    We ate a lot of corn with basil earlier this summer when fresh corn was available from the co-op, but local corn is a little harder to find now. I’m definitely going to freeze what I can fresh and maybe it will make a nice addition to a corn chowder this fall, and brighten up some other dishes.
