Thursday Recipe Exchange: Happy Birthday, TaMara!

Alas I have no pie photos, but I do have Key Lime Bars.

From our Food Goddess, TaMara:

This will be an abbreviated recipe exchange. Thursday surprised me this week, mostly because I have a short work week, second week in a row, so I have no idea if I’m coming or going trying to get everything accomplished before I take a day off.

And why am I taking yet another day off? Because my birthday is Sunday and I decided to make a long weekend of it.

So when the food blogger makes her birthday treat, what does she choose? Key Lime Pie.

What do you do for you birthday? Are you a cake person, and if so, what’s your favorite? Or do you like something different?

Key Lime Pie
So easy, yet sooo good!

14 oz can sweetened condensed milk
4 egg yolks
6 tbsp Key lime juice*
9 inch graham cracker pie crust
4 oz real cream whipped topping
1 lime, sliced

Preheat oven to 250°

Combine milk & yolks with mixer until well blended. Add lime juice, mix well. Pour into pie shell. Bake for 20 minutes. Let cool, then spread whipped topping over the top, garnish with lime slices, and refrigerate until served.

* you can substitute regular limejuice if needed.

    Happy birthday, TaMara!

    I used to be a german chocolate cake person – homemade cake & homemade frosting, not that sickly-sweet stuff from the can. But when my best friend (male) got married, he quit making it from scratch, and apparently no one else loves me enough to make it from scratch. :-)

    So now I am a southern peach cobbler person, birthday-wise.

    But when family visited this year there was no time for that, I gladly accepted some awesome tiramisu as a “birthday cake”.

    Edit: tiramisu does not have to be homemade. It just has to be awesome.

    I love German chocolate cake. My mom used to make the frosting from scratch, and it was excellent.

    Anyone have a good GC frosting recipe?

    Happy birthday, TaMara! Tomorrow is my 70th birthday (and I believe a not-so-big one for fellow BJ commenter Omnes Omnibus), so it is quite the weekend for Leos around here. Also too, today is my grandniece’s 15th, and I guess I don’t have to tell this crowd who’s turning 51 on the 4th.

    My friend who bakes has promised me my favourite, a spice cake with caramel icing, but she is sick so I may have to wait until next week to blow out the candles.

    My favorite is NY cheesecake with strawberry sauce and strawberries topping. I like anything key lime, too.

    Happy birthday TaMara.

    GC Frosting
    Combine 1 c. evaporated milk, 1 c. sugar, 1/2 c. butter & 1 tsp. vanilla. Cook and stir over medium heat until thickened (about 12 min.) Add 1 and 1/3 c. coconut and 1 c. chopped pecans. Cool until thick enough to spread, beating occasionally. Makes 2 and 1/2 c.

    Anne Laurie, I think you are the one who pointed out Smitten Kitchen? I wanted to thank you as I’ve done several of her recipes this week and they are fantastic.

    I’m definitely trying TaMara’s key lime! I adore key lime anything.

    Happy Birthday & many more. As a kid I was always allowed to ask for whatever I wanted for dinner. It was always either Pasties or Nasi Goreng. My mom was a miracle worker:
    2 1/2 cups cooked & cooled Rice
    2 Tbs. Vegetable Oil
    3 Eggs
    1 Onion
    Sambal Ulek or Sambal Badjak ( roster sauce to many – to taste)
    1 Garlic Clove
    1 bunch green onions
    1 tsp Ground Coriander
    1 tsp Ground Cumin
    1/2 lb pork, cubed
    1/2 lb Shelled shrip
    touch of shrimp paste (this smells like hell but in the mix does not taste bade.

    Beat the eggs cook like an omelet, slice into strips. Heat the oil in a wok or large frying pan. Add the chopped onion and 1/2 the scallions. Fry until the onion is soft and the garlic at the end. Add the Coriander and Cumin. Slice Chicken into strips and add with the shrimp to the onion mixture and cook, stirring occasionally until they are well mixed. Add the rice, the shrimp paste and some soy sauce and omelet strips and cook for a further 5 minutes.

    I’m still enamored of cupcakes. I think the craze is dying down a bit, but I still prefer them to a big ol’ hunk of cake.

    I love making Apple Betty (a.k.a. Apple Crisp) for my birthday dessert. Admittedly, that’s in part because I can claim it’s “healthy” (it’s got apples!) while still piling on the ice cream.

    APPLE BETTY

    4 cups sliced tart apples (4 medium)
    2/3 cup Packed brown sugar
    1/2 cup flour
    1/2 cup oats
    3/4 tsp. ground cinnamon
    1/2 tsp nutmeg
    1/3 cup margarine or butter, softened

    Heat oven to 375 degrees. Arrange apples in greased 8×8 inch pan. Mix remaining ingredients and sprinkle over apples. Bake until topping is golden brown and apples are tender, about 30 minutes. Serve warm, with ice cream or cream. Makes 6 servings

    If desired, you can microwave this uncovered for 12 minutes instead of baking in the oven. For my family, it’s great to have this all prepped before dinner and then start the microwave when we sit down to eat the main meal. 12 minutes is about perfect to have it steaming hot when we’re ready for the dessert.

    For the summer months (of course, not when my birthday is), I love to substitute other fresh fruits instead of apples (or even *with* apples). Blueberries, strawberries, raspberries, blackberries – all are excellent with this mix, in my mind.

    I’m not a big sweets person. I love to cook and my favorite B-Day cake is carrot cake with a lemon frosting. Oh the tartness with the natural sweetness.

    Happy birthday & thx millions for the recipes . . . for me — who would just eat from the freezer section with the occasional deli offering — it’s been fairly life-changing to have this routine reminder that food has many purposes. You’re one of the many reasons BJ is so addictive.

    I love key lime pie, so I’m going to make this one.

    Birthdays at our house are always the same: angel food cake with fresh whipped cream and strawberries. There’s something so amazing about the simplicity of it, plus it’s always, always beautiful to look at. I think our 20-something daughters would call the cops if I ever made something else for them.

    @Elizabelle: This is the cake I make for my hubby every year. The frosting takes some effort (10 to 15 minutes of constant stirring) but it is worth it.
