@NotMax: I’ve used mayonnaise in a cake. I’ve had, on occasion, had to make the chocolate cake that I posted about a while back for people that can’t have dairy. So instead of using sour cream, I substituted mayonnaise. It worked pretty well. I also have a recipe somewhere for making a faux sour cream equivalent by mixing tofu with lemon juice that worked pretty well too.

I was thinking maybe use a trivet* or other insert – like one of those fold-out Lotus-type vegetable steamer inserts, only one properly designed for oatmeal – and the “Most Helpful Positive Review” at this site went in that direction (*fwiw that’s where I just now came into first contact with the word trivet, at least that I can recall).
Using a trivet would allow you to use a higher setting on the crock pot without burning the oats that are in direct contact with the hot interior surface of the crock pot.
Do you want to retain the texture of steel-cut oatmeal (unlike quick-oats or similar microwave-friendly versions)?
The Most Helpful Critical Review over there avoided the charring at the periphery by using a ‘low’ setting on the crock pot, but the chewier/nuttier texture achievable when cooking steel cut oats was apparently lost.
I only glanced at the main post and those two top reviews, but it seems like something that is doable, perhaps with some experimenting with settings and cookware arrangements (e.g., use of a trivet).

I recently read the 28-issue Alias comic book series that Netflix used as the foundation for Jessica Jones. I loved the characters and stories, so I’m looking forwards to seeing the TV version.

I am not sure how to do the trivet in the crock pot. I only know of trivets as the thing you put the hot dish on so it doesn’t burn the tabletop.

Another suggestion I saw was to put the oatmeal fixings in a bowl that will fit inside your crock pot, then fill the crock pot with water (not too much), then carefully lower the bowl into the crock pot. Here is the link I saw for that; I found other links, but the authors of those so often seemed to be happy with having nicely cooked creamy oatmeal waiting for them in the morning…what’s the point of using steel-cut if you’re happy with the standard creamy stuff?

@Suzanne: If you must use a crockpot, the method Sharl describes is like a ban marie. I would cover the bowl with foil to keep the moisture constant. You can ball up pieces of foil to lift your container off the bottom of the crockpot if you don’t have a suitable trivet. A stainless steel bowl could work as the internal container.
I have never used this method in a crockpot. It’s pretty standard for rice in a pressure cooker.
I doubt you will get the texture you want from any crockpot variant. Rice cookers do this pretty well, and if they have a delay timer feature get you can have a wake up to it mode.
