    @Adam L Silverman: On Food Network they have Chopped. That’s different adults, usually pro chefs, competing. You know the format, right?
    Chopped Junior has kids as young as 8 or 9, but usually 11-13, competing in the same three meal format. Appetizer, entree, dessert.
    It’s pretty intense and the kids are usually full on shit talkers. Telling the camera about how they were cooking at 3 years old and they are going to win it all.

    @Corner Stone: Okay. Never seen either show, but I understand the format. So basically we’ve got the cooking version of beauty pageant/pro pee wee sport kids. And I’m sure similar parents too.

    @Richard Mayhew: given the movement in response, more likely mediate. That’s what I did.

    ETA: I was playing in goal (soccer) as a favor to a friend for the grad student/post doc team of foreign students at UF in the grad student/post-doc intramural league. They needed a goalie. I was moving almost the exact same way: going from right side of the goal towards the left. As I planted my left foot to begin the pivot, I felt something pop as I caught the ball, and then went down and stayed down. That was the last time I ever played soccer. Which was the first time I hadn’t played it since I was five.

    Have you ever watched the Gordon Rsmsey one with kids? Master Chef Junior? Those kids are amazing! And they’re from all over the US. Not all of them are stockbrokers’ kids. They make me ashamed of my own cooking skills and I think I’m a pretty damn good cook.

    @Omnes Omnibus: Its a line from the V for Vendetta movie that always stuck with me. They main female character is threatened with being taken out behind the chemical sheds and shot if she doesn’t cooperate with the secret police. I recommend the movie over the graphic novel. Largely because there are several sections were Alan Moore’s serious drug intake was seriously impacting his writing.

    @Adam L Silverman: Aha. I saw the movie, of course, but it isn’t something that stuck with me. I am not a big fan of Fawkes (trivia note: Fawkes’ signature frequently used Guido rather than Guy) and that prejudice, I think, affected my view of the movie. Never read the graphic novel.

    @Omnes Omnibus: I thought they did a great job with the movie. They caught the essence of the graphic novel, updated it to make it relevant for the mid 00s, and avoided the drug induced wackiness that tended to creep into some of Moore’s work if he was really hitting the stuff.

    @Omnes Omnibus: From what you’ve related about your lack of relationship to the source material for a lot of these things, that doesn’t surprise me.

    I think there were several timely bits in the movie, that as fiction, speak to larger issues we’re dealing with as a state and society. The whole “there is something wrong with our country” speech is, I think, the best and most important of them.

    @Adam L Silverman: The “there is something wrong with our country” speech was well said given the time frame. OTOH, there is a reason I supported Clinton over Sanders. I don’t want to blow up our institutions; I think we need to reform many of them. But I think they are capable of reformation.

    @schrodinger’s cat: You want the beef, chicken, lamb, and/or turkey recipes for the marinade?

    There is even a pork variant developed by a Lebanese family that moved to Mexico. They brought the upright rotisserie method (al pastor) with them from Lebanon, adapted it for Mexican cuisine, and opened a restaurant appropriately named Al Pastor.

    The key to this type of grilling is to slice the meat, pregrilling, thinly, then marinade it, then layer it on the spit from bottom to top. And then rotisserie grilling the upright spitted meat.

    Ingredients

    Meat
    2 lbs of fatty beef cuts (roast cut/steak cuts/butter steak…)
    Marinade Ingredients
    5 cloves of garlic
    ½ cup of freshly squeezed lemon juice
    ¼ cup of apple cider vinegar
    ¼ cup of olive oil
    1 teaspoon cloves
    1 teaspoon salt
    ½ teaspoon cumin
    ½ teaspoon caraway
    ½ teaspoon cardamon
    ½ teaspoon of oregano or thyme
    ½ teaspoon cinnamon
    ½ teaspoon nutmeg
    ½ teaspoon crushed peppercorn
    ¼ teaspoon of cayenne pepper
    ¼ teaspoon ground ginger

    Tahini Sauce Ingredients
    2 teaspoons of Tahini paste
    1 cup of freshly squeezed Lemon Juice
    3 gloves of garlic, crushed
    a dash of Salt

    Sandwich Ingredients
    ½ cup of finely cut Italian parsley
    Grilled tomatoes
    French fries
    Pita bread

    Instructions

    Shawarma Marinade
    Mix the spices along with the lemon juice and apple cider vinegar in a blender for a couple of minutes. Don’t mix in the olive oil yet.
    Cut the beef into chunks of 4 inches long by no more than ⅔ inch in thickness.
    In a bowl, rub the meat with the marinade, sprinkle a bit of olive oil then rub again, cover and let marinate overnight in the fridge.

    Grilling Shawarma Method 1: Panini Grill
    Lay the marinated shawarma chunks on a panini or George Foreman grill and cook for 10-15 minutes on medium-high heat.
    Once cooked, shred the meat on a cutting board and serve hot.

    Grilling Shawarma Method 2: Oven Roasting
    Lay the shawarma chunks in a Pyrex tray with a bit of marinade, cover the trap tightly with aluminum foil, then gently bake at 270-300F for 2 hours.
    Once cooked, shred the meat on a cutting board and serve hot. This roasting method will make the meat very tender and juicy and will almost fall apart.

    Preparing the Tahini Sauce
    In a small bowl, whisk the the Tahini paste, crushed garlic, lemon juice and salt until you turn the paste into a sauce.

    Serving the Shawarma
    Place about 4-6 ounces (to taste) of shredded shawarma in a pita bread along the diameter, sprinkle some Tahini sauce, add freshly grilled tomatoes, french fries, a garnish of Italian parsley.
    Roll and enjoy

    @schrodinger’s cat: this recipe calls for fatty cuts, but that’s not too helpful. I’d go with fattier steak cuts, but if you’ve got a good butcher near you, if you explain what you’re looking to do, they should be able to help. I would not go with chuck type cuts or brisket, even though they’re fatty cuts. I’d also avoid flank or hanger or skirt steaks because they’re not fatty enough. The cut is going to be wrong. I’d think strip or ribeye with good marbling and good fat around the outside of the steak. Don’t trim the fat off! You’ll want it to help marinade the meat as you’re grilling/roasting it.
