I spent the night watching multiple time lapse videos of various squash and melons growing (BECAUSE OF COURSE I FUCKING DID) and the verdict on the PTBNL (plant to be named later) is spaghetti squash.
Also, alarmingly enough, there are a LOT of time lapse videos of vegetables growing which is both amazing and weird to know.

That is why it looked so familiar. My mother ordered some Spaghetti Squash seed from a catalog back in the late 60s. Probably Burpees. She liked to try to grow things that were rare or unique. I remember thinking it was edible if not exactly spaghetti.

@BeautifulPlumage: You are undoubtedly thinking of this BBC documentary. That was of course in the 1950s; selective breeding and GMO technology have now made spaghetti available from faster-growing plants.

I like squash, but not a fan of spaghetti squash. I’ve tried cooking it several times over the years, but it just turns out bland and watery for me.

Spaghetti squash are wonderful if you bake them when ripe then scrape them out into spaghetti like strands and mix in your favorite tomato sauce and bake some more. They also keep a long time so you can do that in the winter when baking also warms the house. You probably already know that but a quick scan of the thread did not seem to include information to that effect. But I might have missed something.

This was probably my fault. I told Cole that spaghetti squash was yellow, and that didn’t look like any spaghetti squash I had ever seen. Interesting the it starts as spotted gray and then goes to yellow.
I would not have predicted that.

My mother used to grow spaghetti squash.
You can get the same effect or better by just growing zucchini and buying a zoodle maker. We are currently neck-deep in zucchini and I’m making a LOT of zoodles. Last night I made fresh pesto with the basil we are growing and served it on zucchini zoodles. A few nights earlier it was zoodle puttanesca that was excellent.

If you don’t overcook spaghetti squash it has a pleasing crunch that mixes well with sauted mushrooms, onions and melted cheese. I love spaghetti squash especially since I don’t eat pasta anymore because it’s too high in carbs and spikes blood sugar.
