You all would do this shit on the one weekend I have absolutely no time to participate. I just got done delivering all the stuff to the tailgate, shuttling people around, and now I am making some broccoli cheese soup for everyone to have something warm after the football game, which doesn’t start until 4:30 so people are going to be tired and cold and need something to warm them up. I’ll catch up with you all later.

    I cannot stand the smell of cooked broccoli but I was curious about broccoli cheese soup and how it could take an inordinate amount of time (it doesn’t – it’s actually quite a fast soup to make).  Even though I will NEVER make broccoli cheese soup, I am completely besotted with the suggestion of using a kaiser roll as a “soup bowl.”

    MY LIFE IS CHANGED.

    I cannot wait until I make soup again.   Which reminds me … last winter I used Sally’s chicken pot pie recipe to make single-serving pot pies and had leftover filling that I then turned into soup by adding more half and half.  It’s really good.  I should do it again but with a kaiser roll on hand to use as a bowl!

    @karen marie: I always thought that the use of a bread bowl for soup (the richer, the creamier the soup the better) was one of the most decadent things I ever saw as a regular, ongoing menu item for a cafe or restaurant.

    One thing I really like about this time of year is, it’s soup making time! Soups and stews: I like making them very much. As someone who only started to cook seriously in the last couple of years, they are a new and exciting universe to explore.

    I made another batch of chicken soup this past week – in the Instant Pot! An overnight process reduced to 2 hours! – and for once I used thighs instead of wings or breasts. The difference in the flavor of the broth is breaktaking.

    (I’ve never been a dark meat fan, which is why I had previously used white meat for my soup. Lesson learned!)

    First batch of chicken sausage gumbo of the season a week back. Awesome as usual but…gluten free flour for roux tends to separate from oil. Maybe not the right way to describe it, but just not the same as using regular flour. Still all good and perfect fall and winter soup.

    @HinTN: Oh, Sally’s recipe is teh absolute bomb, as the kids say.  The pies and soup were fantastic.  I used her pie crust recipe that uses half butter, half vegetable shortening.  It is a beautiful, flaky crust.  You should definitely make it, or just skip the pies and turn the filling into soup from the get-go.

    I haven’t bought a canned soup in decades, having discovered how incredibly easy – and relatively fast – it is to make a really good scratch soup.

    @Danielx: I use rice flour rather than GF baking mix, as the stabilizers do weird stuff, and I use oil & butter together. It’s worked so far.

    @Sister Golden Bear:   Yeah, but that’s complicated.  Arizona is a bakery-free zone.  I’d have to make sourdough rolls – which would mean I’d have to start a batch of sourdough and, if I can keep it alive, figure out how to use it, and end up with a bunch of sourdough rolls (if I’m lucky) that I have no use for.  Much easier to go the grocery store and acquire one or two already-made kaiser rolls that don’t have companions needing precious freezer space.

    I have canned clams (again, because Arizona) but I don’t have any celery or potatoes, so clam chowder will have to wait.

    I miss southeastern Massachusetts.  I used to make little necks in a white wine and lemon sauce with little necks picked that morning.  I had a fish store a five-minute walk from my house.  So sad!  I never made clam chowder when I lived there because I could buy freshly made clam chowder from a number of nearby places.

    @Gin & Tonic:  One of the best clam chowders I ever ate was at a place on the main wharf in Provincetown.  It was in late September, so all the tourists were gone.  It was a really nice chowder, properly made with a flour-based roux instead of the shitty cornstarch that most places outside of Mass. and Rhode Island use

    I see the Bethany College football team lost big on homecoming day today, 49-7.  Fortunately, that’s no reason to not enjoy the weekend as an occasion for a big party and get-together of old classmate buds, with food and a kegger to boot.

    @CaseyL: Soup. I grew up on canned soup, then when I met people who knew how to make soup, I thought it was magic, and please teach me how.  We made stew at home and froze the extra, growing up, but not soup.

    Then I was making soups all the time, and I’d bring some to my parents house, and my dad would ask what I seasoned it with, and I’d list all the vegetables that went in, plus salt. I discovered the flavors marry in the fridge overnight, so 2nd and 3rd day soups were even better. Always make enough for leftovers! Usually this was veggie soup, or chicken veg, turkey veg, with usual stuff, onion, carrot, maybe celery, but turnip if possible, maybe some greens. Soon my dad was telling me His soup trick, which was to put a pinch of fennel and of cumin in, for background flavor. He became a master soup maker later in life.

    later, after being introduced to pho, I figured out how to make a version of that at home. And a friend served me a wonderful soup I’ve repeated: chicken soup w broccoli, and with red cabbage. At the end, add in a bunch of torn cilantro to taste. Purple and green soup, so beautiful.

    Sometimes, in a really drastic hurry, I rip green onions and flimsy greens into a thermos cup, perhaps some rice ramen, and pour over hot water, steep, then add miso, or instant broth, maybe ginger from a jar.
    i suppose the ramen seals it into prayer form, may I be nourished.
