I can count on one hand the number of times I’ve baked bread. But I’ve had a yearning for orange-cardamom bread since the nearest-to-me Whole Foods stopped selling it years ago. So I dug out the no-knead recipe I made last year, add the grated orange zest, powdered cardamom, and a touch of honey. @Kristine: I’ve learned to use a Kitchen Aid for kneading, once I knew how wet bread dough was supposed to be. The *nice* thing about that was, I got to see the dough go through the stages of “grainy/lumpy” to “smoothing” to “smooth/elastic”.
Then, if you want to knead, you have a better idea what to look for, if’n you ever want to. I’m afraid kneading is beyond me.
But kneading (as no-knead breads show) can be overrated. If all you want is *good bread*, you can save a lot of effort.

(b) The only way to stop the thing and rewind to beginning is to touch the video (c) touching the video just unmutes the sound without stopping the video, THEREBY COMPLETELY AND IDIOTICALLY DEFEATING THE ENTIRE POINT OF BOTH THE MUTING AND THE AUTOPLAY.

@WTFGhost: I do have a Kitchen-Aid with a dough hook. I think I used it once, for some whole wheat bread. The bread came out okay for all it was pretty dense. But that’s what happens with straight whole wheat according to the recipes I’ve read.
I’m sure I’ll give kneading another try at some point. But this recipe made a decent loaf the first time I tried it, and the orange aroma of the dough is promising.

I think I had to refresh the page about 6 times to get the first one to have the sound on and start close enough to the beginning.
I wouldn’t be at all surprised if that were by design. 1) 6x as many views on Winders! 2) Annoys enough people to get them to download the TT app instead so that TT can directly harvest even more data about them.
Similarly with the 2nd one – many refreshes to get everything synced to work from the beginning with the sound on.

@Kristine: Try adding a teaspoon of vinegar to the liquid you use for the dough. The lower pH helps stop the reaction that prevents the yeast from fully expanding, which is one reason you end up with dense, even gummy, bread. Sour dough starter achieves the same result. This is one reason most recipes include all-purpose flour with whole wheat bread recipes. It has to do with the higher protein content with whole grain flours.

I will say the one time I was forced to implement auto play, we set it up such that the first time it displayed, it ran muted for 10 seconds or so, then unloaded itself and put up an image with a play button. If you hit play, it reloaded then restarted unmuted. Marketing hated it.

I miss TikTok but people are right – its addictive. There really is something more authentic about the people over there though – it definitely includes a better cross section of the country. I feel like it has a low bar to entry, that people feel they can go there and create content even if they’re not super savvy. For example, TikTok has this whole subgenre of people (women) unloading boxes from food banks or showing us how much food EBT buys. You’re just not going to see that on Instagram or Twitter.

@Citizen Alan: RFK Jr. had a big “exposé” about thimerosal in Rolling Stone in 2005 that briefly had me wondering if he’d genuinely uncovered some kind of conspiracy. But there was a science blog called Respectful Insolence (it’s still around!) whose creator, “Orac”, spent a lot of time looking into alt-med claims and he was all over it, pointing out that nothing the article was saying was actually new, it was basically a development of Wakefield’s old grift and had been long-debunked. So that set me right.
