@WaterGirl: The first one I made, was lemon cake – just box mix and lemon-lime soda.
This one, is a full on cake from scratch that uses, wait for it, vinegar and baking soda instead of eggs. I’ll be interested to see what the texture is like. It’s from King Arthur, so I’m sure it’s pretty good.

@TaMara: I do have an air fryer function on my countertop oven now, but no, I haven’t tried the air frying function on cookies.
Do you recommend it?
edit: I make up a batch of dough, and then I bake 3 of the cookies a day. :-)

@WaterGirl: Yes, and I do the same. Freeze them into pre-made into dough balls and pull out and bake as needed. Kind of like “break glass in case of emergency” food.
You might have to experiment with temp and time on your convection oven, but highly recommend air frying them. Crisp on the outside, super gooey on the inside.

And I didn’t know you could air fry cookies? That could get dangerous…

Here’s the chocolate chocolate chip cookies recipe with air fryer directions that work for any dough cookie (at least, so far).

Somewhere along the line I realized that one my barriers to acceptance was not trusting people in certain ways. Trust people to know themselves, know who they are, who they love and how they want to live in this world. That is true freedom. No one needs me or anyone else telling them who they are, should love and so on. As my kids have grown up, trusting them in themselves and in their decisions has allowed us to have good relationships, something I often see other parents struggling about with their adult children. The bear got it right.

Yum, that looks delish! Reminds me of the strawberry shortcake made by an acquaintance; she used cornbread instead of a biscuit or sponge cake. Also yum!

I also like the idea that “you’re not *just* a bunny – you’re my special bunny friend, who is not a normal bunny.”
