I’m having an interesting Thanksgiving. Went on the Keto diet a few weeks ago, and I can’t eat stuffing, mashed potatoes, etc.
But you know what I CAN eat? Deviled eggs. I’ve had 12.
So far.

It depends on the crust. Tart crust is traditionally sweeter, more like a cookie. One crust pies have regular crust (no sugar). Most pumpkin pie recipes are one crust pies. But lots of people do make pumpkin tarts.

It also has a dash of garam masala spice, that’s now in my every-time recipe.
MisterForkbeard
@HumboldtBlue: A good suggestion, thanks! I’ll have to read that more carefully.
It’s more than I have to avoid most of the traditional foods, though. I basically never eat mashed potatoes for example, so those w/ gravy is a real treat. As are good bread rolls.
But yeah, lunch today was turkey and brussels sprouts. I made deviled eggs for the mid-afternoon and this evening is going to be turkey, green beans, and some other things. I may make some bacon brussel sprouts, because why not.

boiled/steamed or roasted then mashed?
roasting cauliflower, ( olive oil, salt, pepper, sometimes a light dusting of smoked paprika), makes it a completely different vegetable.
Another “one weird trick”. We have Saladmaster pots. 316 stainless steel. They don’t “react” with what you are cooking, and it’s most noticeable with cabbage. Any pure 316 stainless pot will do.

I hated pumpkin pies until I started making them from real roasted pumpkin and real cream, half and half, or my current favorite version eggnog. Sometimes I use maple sugar instead of regular sugar too. Or a pecan praline layer under the pumpkin layer.

I miss my friend who used to throw the best “thanksgiving for strays” up in west Marin. Don’t smoke, kids.
Le Comte de Monte Cristo, fka Edmund Dantes
it was just the two of us this year. I smoked a small turkey for about 9 1/2 hours, potatoes, green beans, a cranberry-bourbon sauce, gravy. For dessert, we did a gingerbread cake.
Oh, and bourbon, weed cookies, cigars and a nice Sauvignon Blanc…..

@satby:
I believe it! But for those of us too lazy to not use canned ingredients, here’s my secret, such as it is, for a good pumpkin pie: graham cracker crust and double down on the spices.
Details:
I also only use maybe 3/4 of the can of evaporated milk; makes for a more solid pie. (If you take milk/cream in your coffee, you can use the rest of what’s in the can in your coffee.) Other than those changes, just follow the Libby’s recipe.
Kattails
@satby: sounds good. Totally agree about fresh ingredients. I was eyeballing an “eggnog pie with pecan crust” from an old Victoria magazine, the filling is basically a Bavarian cream, (gelatin, egg yolk custard with whipped cream) with brandy and rum. However the neighborhood Christmas dinner has been cancelled. My standard garb of leggings is getting *ummm* uncomfortable so I dare not make this just for myself.
Lapassionara
@WaterGirl: I vote for that. ?

Gin & Tonic
Our Thanksgiving will be tomorrow, because in this day and age, what’s a calendar anyway? But largely because today it rained all day, and tomorrow will be nice and unseasonably warm and we can sit outside and eat because my son-in-law was an idiot last week and had lunch with an old friend who called him the next day to say he was COVID-positive. So he wears a mask unless he’s actually putting food in his mouth and he doesn’t enter the house.
Worse, my daughter told him “don’t meet up with anyone when you go to the city” and he did this anyway. Tension level is pretty high.
