    @Betty Cracker: try yogurt. Amazingly simple – get milk almost boiling, let cool a bit (lookup the temp) then add a tbs or two of plain yogurt you like. Stir and when blended well, pour the hot milk-starter into a big jar or four and put in a 200 °F preheated oven then turn off heat and leave closed for 6-10 hours. No maker or fancy crap needed. Make it when you go to bed you have room temp yogurt for breakfast. The fresher and better the milk, the better yogurt, but even plastic jug milk from Walmart tastes pretty darn good as yogurt.

I’ve read you can use other things as the starter as well. You get a quite different flavor of yogurt and different bacteria.

    I haven’t done it myself but i know someone who did. Then he used the chili stem yogurt as a starter for the following batch. Said the flavor changed over time. He branched out to all sorts of things as starters–cucumbers, apple, whatever he had around. Some took longer than others. He said he’s never buying yogurt from the store again.

    Here’s a link to the Wild Fermentation website with someone’s description of it. I think you kind of have to wing it a bit. Just get in a play around with it. Wild Fermentation is Sandor Katz’s website and his book is the bible of fermentation.
