I made a delightful cold salmon salad tonight for dinner. Just a can of salmon, some mayo, celery, onion, salt, pepper, and a little curry powder, put it on a lettuce rap with a couple slices of tomato, and it was so good. It amazes me how just a little bit of curry powder can elevate the flavor of the dish.
What is everyone up to? I am just channel surfing, currently watching an A&E biography on Rowdy Roddy Piper.

I once had a desire to fry up salmon patties the way mom did when I was a kid. I bought canned salmon with the bone in, and found it kinda gross to deal with. Then I proceeded to fry it incorrectly and the whole thing turned into a non-patty-like hash. I threw it out. It did cure me of the desire to eat that dish though.

Cole, your recipe sounds great. I have a comfort food recipe for a salmon puff that’s very similar—add to your basic ingredients butter, torn-up bread, milk, and lemon juice; mix it up, put it in a casserole dish, and bake. It’s probably from Weight Watchers or Betty Crocker, so no special pedigree, but as I say, comfort food.
Tonight I was inspired by a leek, kale, and parsley frittata recipe in the Washington Post. Because I had none of those ingredients (sadly, my kale had gone off in the fridge), I went with red onion, scallion, and asparagus instead. Perfectly fine, with a Caesar salad.

Just got back from dinner in a restaurant, inside, with friends who are also now fully vaccinated. There was a wedding reception in a private room where we ate and the whole thing filled us all with hope. A very pleasant evening all told.

Avoiding grading, checking in with relatives about our various frail parents and grandparents, reading reviews of WoW and deciding it’s a bit too bloody for the offspring at this point. I do take comfort from hearing about John still playing with one of his long time guilds as one of my kids is starting to join guilds and so forth. I do not really like hearing about winning points by slaying wolves, but I dont think parents and children always need to like the same things, and the kids definitely need ways to hang with friends.

J’s parents lived with us for around their last 5 years. We looked into assisted living places, but couldn’t find one that made sense for them and us. We had home health aids to help out, including an overnight shift, but it was still a big job.
Don’t be hard on yourself – there is no best solution, just do what you can.

Sadly, a lot of our parents of a certain generation used recipes from that time.

Every other use of canned salmon and canned tuna, from cakes, through casseroles to pastas, however has been an abomination.

A week of hard labor by a crew of plumbers and a very large check later, my 71-year-old cast iron main drain pipe was finally replaced. Some idiot before my mom bought it had thought it was a good idea to replace the wooden front porch it came with by pouring a lump of concrete about 5×5 feet right on top of it.
So the plumber I found, who was excellent, got the city to agree to reroute the pipe around that area and now all my pipes are new enough that I consider myself finished for life. I hope.
I decided that since they were going to have to cut into the walls and tile in the 71-year-old bathroom, I would remodel it. Today the housemates took the day off and we decided to go for a nice meal outside somewhere and then to a building surplus store in Santa Ana to pick out a vanity and top and sink.
The first four restaurants we tried were all closed, I presume out of business. Two that were open had outside seating that was packed and in no way socially distanced. We ended up getting Pollo Loco from the drive thru and eating in the car with the windows down.
Everyone I saw during all that driving around had a mask on in the proper position over the nose and mouth.
When we got to the building and supply place, the parking lot had quite a few cars in the lot, and we had to stand and wait in a line out the front door while a guy with a clicker kept count of how many customers were inside as the required limit had been met. There were green “stand here” labels to keep the line in proper social distance, and all the people stood on theirs and had masks on even as they came out of their cars, and all the employees had masks on. There was a couple with a baby in a stroller, probably three or four months old, and it had a mask on too. We only had to wait a few minutes because a large multigenerational family came out. There was hand sanitizer all over, signs saying MASKS ARE MANDATORY, and several employees who did nothing but go up and down their assigned aisles with bottles of cleaning solution and paper towels cleaning off all the surfaces on every cabinet, sink, and surface that could’ve been touched.
The only guy I saw the whole time being a douche was a moron who kept going past the “employees only” sign to stand next to the cashier to show her his drawing. He has 56 inches of space and the vanities come in 48 inches and 60 inches. He kept showing her his crappy drawing of how he thought a 60 incher could be cut down to fit and still retain the sliding barn door type fronts.
We were in our proper place seven feet away from her, and she was getting aggravated because they come in 48 and 60, they don’t cut anything, they sell it and it’s not refundable if he wants to buy it and cut it it’s his own risk. Maybe hire a contractor? He was in his 50s with a very expensive haircut and clothes, doctor or lawyer type, and he wanted what he wanted when he wanted it, damn it. He was wearing boat shoes, a sure sign of assholishness away from the ocean.
He kept drawing more things, like that would change anything, and getting that attitude with her, and his mask slipped down below his nose. I saw the manager approaching, and was sick of waiting my turn, so I said he needed to pull it up and step away from the cashier. I may have spoken a bit loudly to get through the layers of mask I had on. He looked at me like he was going to tell me to butt out; the manager stepped right up, threw him out and everyone thanked me.

Had my culinary outing yesterday, when I went on a Hamburger Quest with a friend. We do this about once a month, pick out a place that ideally we’ve never been to before – and, over the last many months, someplace with a parking lot on site or nearby, where we can take the burgers and eat in our cars parked next to each other.
Though now things are getting more relaxed: last month we picnicked on the steps of a museum, and yesterday we ate on the restaurant’s patio. Seattle’s chancy spring weather blessed us with a few hours of warm sunshine. It was delightful.
Going out for food with friends comprises 95% of my in-person social activity. Though I am hankering to take a long weekend road trip to… somewhere. Somewhere different from my usual haunts.

Now watching subtitled Chinese telenova, courtesy of Netflix, called Eternal Love (but usually referred to as ten miles of peach blossoms from the lair of one of the characters, evidently to distinguish it from every other Chinese telenova, all of which concern eternal love in one form or another),
The schtick that makes ‘ten miles of peach blossoms” especially good is that it exploits the Buddhist cultural trope of a love surviving different incarnations to make the point that all too often our inability to let go of our previous conceptions of the beloved — or, worse, our previous resentments of the beloved — interfere with our ability to actually care for the real beloved with whom we’re currently in a relationship.
And, since it’s a Chinese telenova, there’s lots of melodrama, wuxia fighting on wires, and mcgruffins all with the “why do we even have this lever?” vibe. To misquote Oscar Wilde, it would take a heart of stone not to laugh at the death of Mo Yuan. But it’s relentlessly entertaining and the underlying metaphor makes the fantasy setting work.

I started experimenting with tuna casserole recipes starting last year. (probably because I didn’t grow up on it & thus had no visceral revulsion).
I did find that only a lot of hot sauce makes the traditional tuna casserole that uses cream of mushroom soup tolerable. There’s a couple of grownup casserole recipes, I’m testing out that, so far, have been okay. I’m guessing because of the capers & crushed red pepper among other ingredients.

The “purpose” of canned tuna and canned salmon in a lot of the “traditional” recipes was to add protein to a carb heavy dish, not to add “flavour” or “taste”.

We rocked dinner. For Mr. Suzanne’s birthday last week, I got him a Big Green Egg grill. He marinated some chicken all day and then grilled it, and Spawn the Elder made homemade rolls. He is becoming quite the baker. I also made my favorite burst tomato sauce and pasta. So good. So many leftovers.
I have bread soaking overnight for French toast for brunch. And champagne and OJ for mimosas. Yes, I am an obnoxious liberal who enjoys brunch.
The fridge that was here when we bought our house is just too small. Any recommendations for a new one? I want a fridge-on-top style.

Oh, I understand, there is not just a taste issue there is also texture involved and it’s a food that never sat well on my palate.
Now that being said, one of the best meals I ever ate was from a 65-pound tuna I pulled in while trolling off Johnston Island in the early 90s. That fish went from the hook to the hot grill of a wonderful Coastie from Puerto Rico who made a simple sauce, seared that beautiful fish in the most perfect way, and it was absolutely delicious.

Only downside is some inconsistency. Once in a while you’ll open a can which should properly have been labeled “salt lick with tuna flavoring.” Dumping the contents into a fine mesh strainer and copiously rinsing mostly clears that up, though.

@Ken: You add all the liquid at the beginning, lock the top on, and pressure cook until done. With the right ratio and timing, the rice gets to the desired texture. Lots and lots of recipes floating around the interwebs.

The local gas company had a contractor run plastic lining through the gas mains in our ~ 60 year old subdivision a few years ago, apparently to try to reduce leakage. Since then, they’ve dug up half a dozen intersections to try to fix leaks. It probably would have been cheaper and more effective to do it right the first time, but the temptation for a clever fix must be too strong…

5.5 years in Hawaii was a complete eye-opener when it came to fresh seafood and well prepared seafood far different from what I was exposed to as a kid where beef pork and chicken were prime staples.

@Suzanne: We’ve got a ~ 20 year old Kenmore (probably Whirlpool) freezer on the bottom with a single door fridge that we bought new. It’s been fine. The fan did get noisy a few years ago – it was easy to find the replacement part and instructions on how to replace it, so I did it myself. Never any problems with it staying cold, etc.
My dad had tinitus and couldn’t stand their old refrigerator noise, so he wired up a switch to the outlet so that he could shut it off at mealtime. When they remodeled the kitchen, he looked very carefully at noise levels and got the quietest one they could find, which turned out to be an LG side-by-side. It was amazingly quiet.

Mom baked it. 30lbs of inedibility.
Later, in winter, at the Trenholm’s “country estate”, ( log cabin with loft, on a lake, in cut over Pulp Country), Mr Trenholm made Pollock steaks for dinner. Cast iron fry pan on a red hot cast iron wood stove, ( winter), butter, a touch of season salt, the pan hot enough to crust the steaks, just a minute or two per side, just heaven.

I made a tortilla soup for dinner tonight after emptying out a leftover burrito into a couple pints of chicken broth. Added onion, chili seasoning, lime juice, some local salsa and added some cilantro/cheese/chips/avocado when served. Really good, actually.
Spent a good chunk of the evening playing Returnal on my PS5, which is probably the first good reason to get a ps5 now. Really enjoying it, and how they made a storyline out of the whole “you restart when you die” mechanic of videogames.

Having a little Tylenol for dessert this evening. I moved 10+ bags of soil, at 40 pounds each and I’m sore all over. I transplanted a lot of strawberry plants, “pups”, into two OF the raised beds.
The new greenhouse arrived on Thursday, YAY!!! (The old one burned down on December 23rd in a spectacular fire.)10 big flat boxes stacked 6 feet high sitting in the driveway. under a tarp. We need some assistance to unpack and assemble it, and hopefully tomorrow some of the family will show up to help us with that.

My Joe and I took a trip (the first since COVID) with 2 other couples to Perdido Pass in LA, otherwise known as Lower Alabama. It was delightful amidst all the maskless wonders who we kept a distance from. On the way home we went through Pensacola FL and stopped at one of the best seafood markets in the south, Joe Patti’s. Had chowder last night, crab cakes tonight and stuffed flounder tomorrow for my company, 2 wonderful friends. So happy to have face to face relationships again. Wishing you all the same experience.

In New Brunswick, a big trout was a Brookie, going maybe 6 inches. The daily limit on the Black River was 50 fish a day. On the way across, we stopped at Peterhope lake, to spend an actual full day, not in the car, and fish. The fish were Kamloops trout, 20 inches to 30 inches, ( 4 to 7lbs), 4 per person. Quite a change.

As for fridges, all I can say is don’t get a Samsung. Ours keeps freezing everything, and the guy who has been out twice ($500 repair) didn’t quite fix it. A friend had the same experience. We were going to just replace it rather than pay $500 to fix it, but refrigerators have been utterly unavailable since November. Even if you can get an order accepted, they just keep saying it will be another three weeks, then another three weeks….

I tried to get into this thread earlier so my comment didn’t get swept under from the sheer number of responses. Then my browser took a dump on me. So it goes.
You were talking about making spicy dishes, maybe Thai, in your new-ish wok a while back. I wanted to give you a side dish that is both cooling, but has a kick of its own, if you’d care to try it. The one thing is, you have to like cucumbers. I’ll bet someone clever can come up with an alternative to cukes if you don’t like them. I’m not that clever.
I’m going to run this down as a straight up recipe, with added comments along the way.
1 32 or 64 oz Ball or Mason jar. I don’t know what you all have up there, predominantly, but it’s all the same. I say 32 or 64 oz which depends on how much you like this.
1 cucumber – John, I like to cut mine with a super sharp fillet knife. I do it by hand so some of the slices are paper-thin, while other are twice the thickness of a quarter. You probably have a mandoline, as do I, where you could make them all the same thickness. If you do, and that’s what you want, no harm done.
Apple cider vinegar – I strongly suggest you not decide to try, white vinegar, or red, or balsamic. Apple cider, and I don’t think it matters if it’s the normal stuff or some wonderful cloudy, almost chunky stuff you can get at the side of the road.
You’ll notice there are no weights or measures included here. This is totally to taste.
I take the cukes, after I slice them, and put them into the jar. Then I’ll pour the vinegar over them until they are submerged with an inch or two over their heads.
Sambal Olek – How much? Your call. To taste. You can actually use any kind of chile that you want here. I happen to find Sambal Olek works very well. You could slice jalapenos and toss them in, if you prefer that flavor. Really, anything. But give it a little kick. Like I said, this is typically a side dish that is served cold. It cools you off, a bit, from whatever dragon’s fuel you’ve made as your entree. But has its own playful bite.
Honey – you can use, and I have, sugar, if you want. I happen to love honey. Not necessarily the kind that comes in a bear shaped bottle, but a bit more exotic. My sister lives in the middle of nowhere Florida. Hi, Betty. She doesn’t even live on the coast but in the middle of the state. That said, I’m betting you’ve found some great honey in your area. Back to you, John. Things like orange blossom honey, saw palmetto, Key Lime honey… YMMV. In fact I’m sure it will as you’re not going to find any of those nearby. I happen to like rich, dark honey. Again, your call, and your call on how much to use. Remember you can always add more later.
I think that’s it. I mean, you can put some carrots in there (oh, that’s an idea, leave the cukes out and do this with carrots. I just don’t like them much. Shredded carrots? Not sure how I suddenly found a little creativity, but I guess I did. A little. Green onions. Great song, but they might not hold up all that well with what I’m going to tell you to do next. Radishes! Again, I love just plain cukes, so I don’t need anything else.
I’ve tried adding sesame oil to it. For me that was a mistake. Just a drop or two is a drop too far. I’ve added sesame seeds, after the fact. They were fine. Hmm, after the fact might be fine for something like green onions.
Getting back to it. Put it in the jar, give it a good shake and throw it in the fridge. Give it a little shake each day. Not too hard. How long? Your call. At least three days. I let mine sit for closer to a week. I’ll use it for several weeks, at least.
How do I use them? I put them in a bowl next to my dinner, and now and again, I’ll eat some. Or I’ll use them as an appetizer. A favorite of mine is if I’ve got a nice baguette, some excellent sliced ham, and a good butter, I’ll make myself a sandwich. On that sandwich I’ll put slices of my sassy cucumbers. Gives it a satisfying crunchy bite. And a little fire.
Well, that went on much too long, didn’t? It’s how I roll. It’s part of my low-speed, high-drag lifestyle.
I hope this does something for you, Mr. Cole. It is obviously something you can play around with in many ways. In the end, I’ve found I rater like it.

the Green Egg is made of a thick ceramic pot at it’s center. Once it is hot, the temp is incredible stable, and can be used like a tandori oven. Because it is so stable once up to heat, you can do low and slow, or smoking hot “wood fired” pizza.

Add just a touch of cinnamon with that curry powder next time. Just a bit will add an extra dimension that you didn’t know that you were missing before. A friend of mine that was born and raised there and is back home there now told me that cinnamon was his secret weapon and it was the greatest suggestion.

Just checked and see that the FDA has revised their seafood recommendations somewhat and streamlined the categories. Wasn’t all that long ago when albacore was singled out as “eat no more than one serving a month” as opposed to lighter tunas.

@Jay: That kind of reasoning from nature really seems to be the basic justification for a lot of antivax people–that the virus must be safer than the vaccine because it’s “just a flu” and is natural whereas the vaccine is artificial.
Many seized onto the (true) fact that physically fit people seem to have better COVID outcomes, and decided that diet and exercise must be the only proper ways to protect yourself from the virus, and that getting a vaccine is a kind of abdication of responsibility to an artificial chemical support. I see a lot of that around, couched in these moralistic terms. I suspect seniors were easier to vaccinate because most of them are resigned to the idea that you do have to interact with doctors sometimes. Past 65 you know you’re not going to power through everything with exercise and a fad diet.

Back in college days, would sometimes pick up cod fillets (very affordable then) and a can of red salmon (ditto). Chop up some onion and mix with the salmon (on special occasions also a spritz of lemon juice), roll the cod around a mound of that, secure with toothpicks. Place those in a loaf pan, dump a can of cream of mushroom soup over all, loosely cover with foil and let the toaster oven do its thing. Remove foil near the end to let the top brown.

Had to do this with both parents, dad for about 12-13 yrs with Alzheimers and mom who needed full time assistance for her last year. For about 3 yrs before that she had a visiting assistant to help out. No it wasn’t easy finding affordable places and people to help. Every part of the country is going to be different and every person is very likely going to have somewhat different needs. Also we were doing this quite a few years ago, so I’d expect things to have changed even here. I wish there was some easy way to find the assistance you need but I’d start with your mom’s doctor. There were some federal programs to help a bit, don’t know if they still exist and none of them were greatly helpful, just useful and better than nothing.

My personal favorite is Genova. It is absolutely delicious. If your fear is it will be greasy, fear not.

@RSA: The Penzy’s is amazing, however most of my Indian Recipes don’t call for curry powder but different spices. I generally cook Indian a half dozen times a month. However I do my own spice blends for kicking up dishes. (I make my own garam masala.) This is what I do with store brand curry powder:
Mix together the following spices
2 TBSP curry powder
2 TBSP cumin
2 tsp turmeric
2 tsp ground coriander
1 tsp ground ginger
1\2 tsp ground cardamom
1\2 tsp ground cinnamon

And here’s a recipe for African Black-eyed peas with Tuna:
Can of Geonva Tuna packed in olive oil (I squeeze out most of the oil when I open the can)
Can of black-eyed peas, drained
Can of Rotel tomatoes and green chilies
(or diced fresh tomatoes and minced jalapenos)
Onions and garlic to suit
Mix well into a shallow baking dish bake in a hot oven (400 or so)
While this bakes mix panko bread crumbs with grated cheese, any flavor you like will do
Once the peas and tuna is bubbling hot, cover with the au gratin crumb topping, put the oven on convection and turn up the temp a little bit, bake until the topping melts together and starts to brown, 15 minutes or so.
I sometimes add fish sauce and hot sauce to the pea mix. herbs and spices you like.
Not like Mom’s tuna casserole, not at all.
Last again… so easy !!
