I love the pet and food talk personally..
Last night I made fried chicken for the first time in years and years from a recipe in Food and Wine… came out pretty good but I had a little trouble with keeping my batter on. Tasted real nice and was not greasy and I loved that it was straight forward and used old fashioned Crisco shortening in a 12 inch iron skillet. Next time I will amp up the salt a bit. Gotta talk to someone who knows fried chicken to find out how to thicken and crisp up the skin a bit.

Thanks to the people who contributed to the “HP” thread last week, which degenerated into retro rapture over calculators, keyboards, printers, etc. Thanks indirectly to some pointers from there, I was able to find the right (old) version of the IntelliType software for my aging but reliable Microsoft Office Keyboard and just now got all of its exotic “extra” functionality fully restored.
The best features–incredibly useful once you get used to them–are little Cut, Copy and Paste buttons and a scroll wheel on the left side of the keyboard.

@Elie: Pretty hard with batter. Try soaking the chicken pieces in milk for a while and dredging in flour. Peanut oil will allow you to go to 425 without burning the oil. Here’s a shot of a catfish fry for 50 I did yesterday. I used Zatarains Fish Fry for the coating.

I will try your suggestion. The recipe called for dunking the pieces in a milk egg mixture then dredging in flour/spice combo — which I did. It came out pretty good in flavor but my grandma’s fried chicken always had such a nice thick, crisp skin… mine was ok but needs work. (Grandma took her secret for that skin to the grave with her, unfortunately. I was too young and not into cooking when she showed me back then and I can’t remember what she said)

Easy recipe, given to me by a 100 percent native Jamaican named Tyrone: Go get some babyback ribs and then go to your Rastaman-Jamaican store and get some Walker’s Wood Jerk Seasoning. Slather that stuff (gently, gently) onto the ribs resting on some aluminum foil. Gently, I say, gently, because that shit’s got Scotch Bonnet peppers in it and mind you don’t get it in your eyes. Wash your hands repeatedly. Now the best part. Fold over the aluminum foil to seal it and stick it in the oven at the lowest it will go. Now have a Red Stripe and go to bed. Let the ribs cook all night and by the next morning those bitches will be ready to fall apart. Make some peas and rice and real coleslaw (no sugar, just shredded cabbage, bell pepper, a hot pepper, spring onion and oil and vinegar.) Get the rest of the Red Stripes and pig out the next evening.

@Elie: Double dipping thickens the coating. Go dry, wet, dry. Then let it set for a few minutes which tightens up the coating. Can’t help with the crispiness, though being sure the oil is 10-15 degrees above temp probably will help. Don’t overload the pan. The temp will drop as soon as you put in the chicken. Then drain on paper towels and throw some salt on it.

Jerk Chicken is believed to have been conceived when the Maroons introduced African meat cooking techniques to Jamaica which were combined with native Jamaican ingredients and seasonings used by the Arawak. The method of smoking meat for a long period of time served two practical purposes, keeping insects away from the raw meat and preserving it for longer once it has been cooked. This process also introduces a strong smoky flavour to the meat.
There are two commonly held theories regarding how the name “Jerk” came to be used. One is that it originates from the Spanish word “Charqui”, used to describe dried meat. Over time this term evolved from “Charqui” to “Jerky” to “Jerk”. Another theory is that the name derives from the practice of jerking (poking) holes in the meat to fill with spices prior to cooking. Nowadays, the word “Jerk” is used as a noun to describe the seasoning applied to jerked food and as a verb to describe the process of cooking used.

@Martin: Majorily similar scandal in the Atlanta Public School System that has had nasty repercussions. The Republican led State government, including the governor, is talking about taking some of the teachers involved to court. The Superintendent at the time left a year or so ago to take a similar job in Dallas, and now her job there is in jeopardy. A majority of those at risk are AA’s, including the former school superintendent.
As wrong as all of this is, the REAL underlying issue is the overemphasis on grading teachers based on their students’ performance on these sorts of standardized tests.. The pressure on these teachers was and is enormous.
Not sure that any of this benefits anyone, not teachers, not students, not administrators, and not the communities.

@Violet: I did the swim portion of a Sprint Triathalon. It was only a 400 meter open water swim and I swim 3 times that every day. I knew that it was going to be difficult because you go off in groups of 100 but it was much harder than I anticipated. You were always in contact with other people, couldn’t see and couldn’t breathe properly. It was a good experience but I’m not sure I’ll do it again. I finished and I wasn’t last in a 40-65 group.

If you’re in the LA area, there’s a bookstore in Glendale that serves as a sort of base for the Friends Of Bradbury, sells books signed by Bradbury, and sometimes has fundraisers (for the bookstore) connected to them. I walked in one day (last year, I think) and learned that Bradbury had been there at an event earlier that day, and I’d missed seeing him by an hour or so (he is frail and doesn’t often attend the events). What I get for not reading my email, I guess.

My folks left/forgot me in too many places to count. I learned to ingratiate myself with friends and relatives so I’d have a place to stay, and it made me a good deal more resilient and able to handle whatever life sent along.It’s amazing what even a young kid can manage if you keep your wits about you.

Sometimes cutting back is all we have to survive. A lot of big business cut back not to reduce costs but to jack profits. Screw that, when I had employees during a recession I always cut my pay first, expenses next, then hours. I never had to go farther during 3 prior recessions I’ve owned business during. But none lasted this long.

It makes me nervous for the future, but they also told me privately that I’m doing an awesome job and my primary client just signed a contract today for a new project. But in my case this was basically my last shot till retirement. And I’m falling 3-5 yrs short. And I figure that by the time I’m at SS age they will raise the limit. Again. That tarnished brass ring seems always out of reach. For years I always was one horse back on the merry go round when it showed up and someone grabbed it. Now of course it feels like a real horse which I have to stand behind and push, on his ass. He keeps crapping on me, I keep slipping in the crap and the ring is farther away than ever.

And maybe we are better off now than we would have been, but this still sucks big ones. I don’t know who to believe and trust any more. But very few are buying because of the recession. I’ve cut costs to the bone, even got my previous landlord to cut my rent 2 yrs ago. If I was 8-10 yrs younger I’d have quit 2 yrs ago and done something else. Hell I was 8 yrs younger when I decided/needed to change careers for the third time.

This year I’ll only be running one Fantasy Football League for Ballon-Juice….the 4 conferences of last year were way too much for me to handle! With just one league I hope to be more engaged. Instead of open signups I’m inviting everyone who finished in the top 4 of last years’ conferences to a sort of “Champions” league. It’ll be different from last time – instead of total points, our fantasy teams will play games head-to-head each week.
I hoped to make it more “interesting” this year by having actual prizes, and a signup fee. My plan was that the lions’ share of the signup fee would go to Act Blue or some other B-J-appropriate cause, with a small portion going to a bit of B-J swag as a token prize. But, I haven’t heard back from Cole yet; not sure if he’s cool on the idea or my messages are going into his spam filter for some reason. I’m going to press ahead with the league with or without his blessing…..players, let me know how you feel about the entrance fee idea!
I’ve set the draft for 9/7, the evening before Opening Thursday. So we have some time to work out the details and scoring rules….I’m open to your comments and suggestions.
Invitations are already out to those for whom I have contact info. Check the email you used for last year’s league! I’m also looking for the following managers from last year, who qualified for this year’s league but set their contact info to “hidden” which prevents me from sending an invitation:

Actually the stress level is not huge, it’s just there is no end, good or bad in sight. I’ve done things with much higher temporary stress levels than what I’m feeling now but they were just that. Temporary. The ending was good or bad depending on many factors but it was in sight. And many of those factors were for the most part controllable. Not now. If I can manage to sell pretty much everything I own for 25-50 cents on the dollar I will be able to eat for a year or two. And I’ve lived for almost 5 yrs without health care. Survival I can probably do, actual living is the hard part.
You talk about others being in the same situation, I have been seeing for the last couple of years many more people who seem to be living off the land, so to speak. That sleeping under bridges thing. More and more people are doing that these days. 3-4 yrs ago I never saw anyone around here looking like they were wearing all the clothes they own, that hadn’t been washed in, let’s just say awhile. Now almost every day I see at least one someone like that.
When will this reach critical mass?

John your personal comments are what built this blog, proved that you and the rest of us are full formed humans who share affection with pets and some people, who like to eat and share stories about our gardens. Please don’t deprive us because one or two don’t like it. Whenever I see a dog picture or a plate of food, or a pornographic layout of home harvested tomatoes, I breathe a sigh of relief and relaxation. Because of that, the payroll tax holiday is less redistributive from rich to poor, but it’s still redistributive from rich to poor.
Given that latter fact that you should grok by now, it is still just as fucking wrong to say that extending the payroll tax holiday is a “bad deal” for low income workers and a “sweet deal” for upper income workers. Lets have a look at what you said:

W/r/t to Making Work Pay, I already explained this to you in the last thread, and you never adressed it there, but I’ll explain it to you yet again:
The Making Work Pay credit was part of ARRA and even more progressive than the payroll tax holiday. It was a temporary refund of 400 bucks set to expire at the end of 2010.
The payroll tax holiday didnt replace Making Work Pay because Making Work Pay was set to expire in 2010. If anyone would have wanted it to last forever they could have freaking done so but it was never intended to be anything else than temporary – it was part of the stimulus. It is an ex-credit as of jan 1, 2011 – just as intended all along.

What you do instead is you just don’t respond to that part but opt to go on and on about stuff that is irrelevant, e.g. the Bush tax cuts and the Making Work Pay credit. But what you said from the start was that the payroll tax holiday was regressive legislation that was a bad deal for low income workers and a sweet one for upper income workers. I’ve shown that to be false.
