Somehow, I made an extremely spicy Green Chile. The peppers were marked as hot, so I should have suspected because normally they just assume you know green chiles are on the hot side. These were on the super-hot side.
A jackal sent me this recipe when I was asking for recommendations (and I only have her real name, so I’ll leave off the identification, if she’s around tonight, she can wave). It’s simple and turned out great. The only substitution I made was beef for pork. I’m not a big pork fan. Bacon, sausage and pepperoni are about it.
I used a boneless blade steak, which worked perfectly. I kinda wished I would have popped it on the grill when I roasted the chiles.
Green Chile
- 2 lbs cubed pork shoulder
- 1 tbsp minced garlic
- 1/4 tsp pepper
- 3 tbsp flour
- 2 cups diced fresh tomatoes (or canned)
- 1 can chicken broth
- 1 cup water
- 2 1/2 cups diced, roasted green chiles, skinned (seeded if desired)*
- 2 cups diced onion (I used 1 cup, 2 seemed overwhelming)
- salt and pepper to taste
Brown the pork, add garlic and cook for 1 minute. Add flour, stir and cook for 2 more minutes. Add all remaining ingredients and mix together well.
Slowcooker times: Cook for 2-3 hours on low
Instant Pot/Multipot times: Cook on meat setting (or high) for 1 hour, depressurize. Meat should shred easily, if not seal and cook another 15 minutes.

OT: a friend of mine, who is Japanese, just turned me onto this Netflix show Duty/Shame. It’s a British-Japanese hybrid from the BBC and the visuals (as well as the leads) are stunning. Story is pretty good, too.

I should be honored having this recipe which I sent TaMara posted…but I got it from the Denver Post many moons ago. The only change I make is to brown the onions (however much seems right) before adding them to the mix. Big thank you to TaMara for converting to InstantPot cooking. I didn’t have one when I sent this recipe on, but I have one now and I will try that method next time!

We had a family graduation celebration for our youngest daughter, as she just got a Masters Degree. Just us, the girls and partners.
I smoked 4 racks of babybacks and about an 8 pound pork shoulder using about a 6 to 1 ratio of applewood to mesquite, a commercial dry rub that doesn’t contain sugar (used brown mustard to bind), and a spray bottle of 4 parts apple cider, 4 parts bourbon and 2 parts apple cider vinegar.
It was a long smoke, about 7 hours – pork butt was on the lower placement, so it got treated to the rib fat. Generally speaking, the temp seemed to hover around 220. The final two hours fell off quick, as I had timed it for us to tour a brandy distillery in the city.
Sides were simple – I’d prepared a quick pickle made from red onion, pepper flakes, cider vinegar, white vinegar and some salt. Potato salad, and a lemon-based tart slaw (along with dill pickles and bread and butter chips) rounded it out. Sweet Hawaiian buns for the pork, and two sauces – one sweet, one spicy.
Beer, white claw and wine were there in abundance.
I was told that I peaked as a grill master with that meal – nobody had ever had BBQ that good before.

Tonight for dinner I grilled steaks. Before throwing them on the grill, I rub them down with a spice mixture from the Savory Spice Shop, using their Cuban spice rub, mixed 50-50 with their New Mexico medium chili powder. Grill the steaks, and serve them slice thinly with tortillas, rice, guacamole, and homemade tomatillo salsa it was delicious

The green chili recipe looks like the classic green chili recipe I got from a friend’s mom when I was in junior high. I still make it, now in my instapot. The only difference is that I make a well browned roux that I stir into the chili at the end.

I found two things in my freezer, wrapped in foil, so I couldn’t tell what they were. I pulled them both out and put them in the fridge. I imagine they will thaw by tomorrow so I can unwrap them.

We had been to the Asian market yesterday, and my son is back home for now, so today he did basically a shrimp boil. Head-on shrimp, new potatoes, shallots and corn from the farmer’s market in a big pot with a bunch of Red Lobster brand seasoning (don’t laugh, we actually like it better than Old Bay.) Also razor clams, sauteed in white wine, some more shallots, and tomatoes and basil from the garden. Sitting on the deck close to sundown, eating with your hands, who can beat it?

I just “grill” it with a bit of olive oil in a frying pan on the stove.
edit: I have eaten that 3 times this week. Homemade bread, zucchini from the garden, tomato from the garden. Cheese from the store. :-( Still, it’s always a thrill to eat something that is mostly home grown and homemade (bread).

One package was pretty tiny, so I’m hoping that was steak that I just couldn’t finish after a small number of days, so I popped it in the freezer.
The other is the size and shape of an italian beef sandwich, but I don’t have any of that in my freezer, so for the life of me I cannot figure out what that is.
I’m just hoping that my first words after unwrapping it aren’t “well, fuck”.

Things had quieted down since that video the daughter posted where she was interrogated her mother, who was trying to be somewhat pleasant since she was being livestreamed until she took away her phone mid-stream. Then George Conway got involved when someone tried to interview the daughter about it. Just a real tough family situation that got made public. I honestly feel for the Conway family and think they all made the right decision by everyone laying down their weapons.

Love the roasted peppers. this year I finally solved my neglected flower bed problem by digging out all of the perennials and planting peppers… 42 plants in all! A mix of bells, chili. serrano, pablano, cayenne, and Thai peppers. With the additional care afforded by the pandemic lockdown the harvest will be epic. I look forward to roasting and freezing peppers for winter chili and smoking a lot of the hot peppers for some homemade chipolate seasoning.
This morning my grandsons stopped by for a visit and were grazing in the garden (the 3-year old is a born vegetarian and eats spinach fresh from the garden) when they both decided the chili’s looked too good to pass up! My wife met us on the front porch with a gallon of milk for the boys to chug to cool their burning tongues. Both of them handled it like champs with not a tear shed. Wish I was quicker with the phone… would have made a great video.
